Hershey Chocolate Cake Recipe
(this is one of my favorite recipes, I don’t fuck with the classics)
2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1 1/2 tsp-baking powder
1 1/2 tsp-baking soda
1 tsp-salt
2 eggs (at room temp)
1 cup milk (at room temp)
1/2 cup vegetable oil
2 tsp-vanilla extract
1 cup-boiling water
DIRECTIONS
Preheat the oven to 350°F
Grease and flour (or use Pam, I do and it works just fine) three 6 inch round pans or 2 eight inch round pans
Combine sugar with flour, cocoa, baking powder, baking soda and salt in a large bowl.
Add eggs, milk, oil and vanilla.Beat with an electric mixer, set to medium speed, for 2 minutes. Stir in boiling water (batter will be thin). Divide batter evenly between prepared pans.
Bake for 30 to 35 minutes or until wooden pick inserted in centre comes out clean. Cool in pans for 10 minutes. Remove cakes from pans to a rack; cool completely. Wrap with Saran Wrap & keep in fridge over night. Trust me, it tastes & works better the next day after it’s been chilled.
Wilton Frosting(cuz again, I don’t fuck with the classics)
1 cup unsalted butter
1 cup shortening (get over yourself if shortening freaks you out, use organic shortening, the lesser of 2 evils)
pinch of salt
2 teaspoons vanilla extract
8 cups sifted powdered sugar
3 Tablespoons Heavy Cream (or more it really just depends…)
Beat the hell out of the butter, shortening & pinch of salt. Add Vanilla extract & beat again.
Add the powdered sugar, 4 cups at a time & blend well, if it is super thick, add 1 Tablespoon of heavy cream just until it’s slightly thinned out enough to add the remaining 4 cups of powdered sugar. Adding 1 Tablespoon of Heavy Cream at a time to thin out as needed.
